Ummmm....delish!

This is today's lunch - Chicken Fajita Salad...easy to prepare and very easy to enjoy! The ingredients are 1-tablespoon olive oil, 3/4 cup sliced onions, 1 lb skinless chicken breast, 1/2 tsp cumin, 2 tsp oregano, 1 cup chopped bell peppers, red leaf lettuce, 1-2 tomatoes (I only had yellow on hand) and 1- avocado. This is a recipe for two. I think I can do this! I've heard it takes 21 days to form a new habit. So, this means that at the end of 30 days this eating plan will become second nature...and a lifestyle change has occurred. There are "eating plans" by the dozens to choose from and I eschew using the word "diet" because (although it means food and drink that we normally consume) I'm looking for something that I'll be able to stick with not just for a few fleeting days or weeks and then return to my usual unhealthful way of eating. And by the time the new year rings in we will be almost at the halfway point...woohoo!
